250g frozen peas, partly thawed
1 1/2 tablespoons olive oil
1 large onion (finely sliced)
1 wineglass white wine
pepper (ground from mill)
1 tablespoon chopped parsley
2 Gluten Free Burger Buns, toasted on both sides and buttered.
Heat oil in a saute pan, add the peas and saute over a quick heat for 1 – 2 minutes then remove from the pan. Reduce the heat, add the onions to the pan and cook slowly until soft but not coloured: tip on the white wine, add the bouquet garni and simmer until the wine is reduced by half. Return the peas to the pan, season with pepper from the mill and simmer for 5 minutes. Remove bouquet garni. Serve on toasted buttered buns and garnish with parsley.
I used a Pinot Gris 2012 from Paulownia Estate, a local winery. I got the wine from the Farmers Market, and enjoyed a glass of it with my dinner as well. I also used a homemade bouquet garni and the parsley was from our garden.
