This is not totally gluten free as it has some Guinness in it.
1 tablespoon olive oil
500g stewing steak, cut into cubes
125g onion, sliced
1 stick celery, chopped
1 tablespoon gluten free flour
90ml beef stock
1/2 teaspoon ready made English mustard
1/2 bay leaf
1/4 teaspoon dried sage
1 sprig fresh thyme
Freshly ground black pepper
60g frozen peas
50g bacon rashers

Heat the oil in a large pan and fry the meat in batches until brown. Remove with a slotted spoon to bowl. Add the onion and celery to the pan and cook for about 5 minutes, then mix in the flour, stir well for 2 minutes. Gradually add the Guinness, stock, mustard, herbs and seasoning. Bring to the boil, put meat back in the pan, cover and cook over a very low heat for 2 hours or until the meat is tender. Add peas, hazelnuts and cut up bacon to pan. Put into pie dish. Set the oven to fairly hot – 200 Celsius. Roll out pastry and top pie dish. Bake for 30 minutes, or until pastry is golden.
This makes a pie with a lovely rich gravy.
It has been a busy, and sad week this week. I have been busy with Nutrimetics U+2’s and also had a party. Yesterday I went to the funeral for a 21/2 year old little boy who used to go to our Mainly Music group that I was involved with. He was kicked in the head by a horse and died instantly. He had the most beautiful smile, and the service was lovely. It was at the same church where our friend who died from cancer had his service earlier in the year, and one of the songs was the same too.
In the evening a group of ladies from our church had a pot luck tea and watched The Best Exotic Marigold Hotel. This is the third time I have seen it, but it is a film I could watch over and over, and get something new out of it every time.
I have got a nasty head cold at the moment, that is going to my sinuses, but I hope will clear up quickly. I am going back to bed now for a rest.
